Last year I had a vision to start a new series and that I would continue to add to it. The series. Empowering. Women. Women within our community. Learning from them and interacting with them. Just this month, I attended an event and was so happy to meet some amazing new local ladies.

::Life Lately:: Silence is Golden...

It's been quiet here lately. I have lots going on. Very little down time. New projects on the brain. My focus is to unfocus and some how it's brought me 360. My blog is very important to me.

But, sometimes.

Life takes over.

Life becomes difficult.

Some days I have to dig deep. Be reminded that love, support and blessings come from those nearest to my heart. My family. They are everything. They love us. They support us. They know how to be blessings.

I am human. I do allow life to overwhelm me. To take over me. To get me down. Then I seek. Deep in my heart, somewhere out in my soul and high towards the sky.

Suddenly. Love. Life. Smiles. Family. They overcome. They overwhelm my heart with goodness and I am once more reminded. I have nothing to fear. I should be inspired and motivated. I should rise above and DO everything I feel that I can do. Because it's possible. It's doable.

I am blessed.

::Pollo Tropical & Taco Cabana:: GRAND OPENING



Pollo Tropical is the Sister concept of Taco Cabana and they are about to celebrate another grand opening this weekend  here in Houston!
The new Pollo Tropical will be opening it's doors at 25635 US Highway 59N in the Kingwood area & the grand opening will be this Friday, May 8 with giveaways and entertainment including:
  •  First 100 guests will receive a coupon for a free Create Your Own Family Meal
  • Guests can enter to win Free Chicken for a Year
  • Calypso music, a RoboSurfer challenge to benefit local charities and prizes




Right next door, Taco Cabana will be celebrating its newest location at 25657 US Highway 59 on Saturday, May 9. The grand opening celebration will also feature a variety of giveaways and entertainment including:

::Momma's Day Brunch with Tabasco:: #SaborTabasco

As a Mexican Momma  I love the bold flavor and spicy goodness that Tabasco sauce adds to all my favorite dishes! I especially love it on my scrambled eggs and as topping to many of my favorite Mexican dishes. Did you know that Tabasco has seven great flavors to help you add spice to your homemade food?? Makes 6 servings

Ingredients: 
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped white onion
  • 2 cloves garlic, minced
  • 3 cups beans (cooked or canned, pinto or black)
  • 2 teaspoons Tabasco Original Red Sauce
  • 2 1/4 cups chicken stock, preferably homemade or reduced-sodium canned or boxed
  • Salt to taste
  • 10 eggs
  • 1/2 cup vegetable oil
  • 12 corn tortillas

Garnish
  • 1/2 cup Ranchero cheese, crumbled
  • 1/2 cup Mexican crema
  • 1/4 white onion, thinly sliced
  • 1 or 2 avocados, sliced
  • 1 (6-ounce) piece chorizo, crumbled into small pieces and well cooked (OPTIONAL)

Preparation: 
  1. Heat oil in large frying pan. Add onion and garlic, and sauté for 5 minutes. Add beans, Tabasco Sauce, stock and salt. Cook another 5 minutes. Transfer to a blender jar and puree until smooth.
  2. Cook scrambled eggs. Set aside.
  3. Pour oil into a medium frying pan over medium-high heat. When hot, using tongs, quickly pass the tortillas through the hot oil to coat them. Drain on a paper towel.
  4. Fill each tortilla with approximately 2 tablespoons of scrambled egg and tightly roll up. Place tortillas in a shallow serving dish and cover with bean sauce. Garnish with cheese, crema, onion, avocado and optional chorizo.
