::Honey Bunches of Oats Event Recap:: Voces con Dedicacion #ad

A couple of weekends ago I helped present my cheesecake recipe made with Honey Bunches of Oats at the Voces con Dedicacion event hosted at our local H-E-B. The event was a family filled, back to school event. There was so much food, music, giveaways and fun games for both adults and kids. It was a great platform to meet local Momma's who like to create fun treats for their kids, and I did! I was very happy to see everyone eating and enjoying my cheesecake as much as my kids and family did. 



Not only was I was one of the guests but also met an incredibly young and talented Texas girl, Ashley Acosta. She is not only talented but also respectful and sweet. Her parents were with her on this Sunday morning and you can see where she gets her good hardworking habits from. Ashley Acosta is local singer and has participated in singing competitions like La Voz Kids! I was very honored to have been a part of this event. 


During the event Honey Bunches of Oats presented Ashley with a $10,000.00 as recognition of talents. She stated that she would use that money to help further her future education and fund her career. It was a great way for Honey Bunches of Oats to give back to local Latino Youth, such an honor to have been in the company of everyone at this event on that day!

::Honey Bunches of Oats Sweet Treat:: No fuss Cheesecake Recipe #ad

Our usual afternoon school routine begins with food! As soon as I or my Husband arrive with the kids they rush to the refrigerator for a snack, any snack will do usually. Some days they really crave something sweet. Our usual go to is cereal. Seems pretty basic I know but the kids love it and it's quick and easy, and inexpensive. Today, thanks to my partnership with Honey Bunches of Oats, I am sharing with you a fun, quick and easy snack that you can prepare the night before for that next day after school munchies hour! 

One of my all time favorite desserts is cheesecake! Of course, who doesn't love it. But, I am not a baker or master chef, nor do I feel like I have time to whip it up from scratch but thanks to this no fuss cheesecake recipe I definitely feel very gourmet. For this recipe, my Husband, who is rather and far more resourceful in the kitchen than I, helped me. We pulled together and did some team work, as Team Gomez usually does, even the kids joined in right before bed time. Not without some chaos and tears but all was good at the end of the night and the next morning when our cheesecake was done! 

You will need to prep this sweet treat the night before. It's very simple and far less complicated than it may sound. 

What you need: 
2- 8 oz packages of cream cheese
1/2 cup of Sugar
1/2 tablespoon of vanilla extract
2 large eggs
Pie dish 9-inch
1 box of Honey Bunches of Oats (will only use about 2 cups)


If you have a food processor grind about 1 1/2 cups of Honey Bunches of Oats into semi-fine grains, you can leave it semi-crunchy for texture. You can also use a blender and just use the pulse setting. 

Once you grind the cereal place it in a medium to large bowl so that you can mix with butter. Add about 1/2 a stick of melted butter to it and mix it together, the mixture will be soft but not too soggy. Then, in a 9-inch pie pan press the mixture into the bottom, to create a crust for your cheesecake.  

Set this aside while you work on your filling. 


In another bowl mix, 2 packages of 8 oz cream cheese, 1/2 cup of sugar, 2- large eggs and 1/2 tablespoon of vanilla extract. {You can add sugar and vanilla depending on how sweet you like it.} You can use a high-speed mixer or in my case, I used my food processor to wipe the ingredients together. Once my filling was soft and semi-liquid, I added it to the pie crust already prepared and placed in the oven at 325 degrees for about 40-45 minutes. 

Once the center is firm and set you can take it out. 




Once cooked I set it out to cool for about 20-30 minutes, then placed it in the refrigerator for 4 hours (or overnight) to set. I then added some fruity toppings. I had strawberries available but you can add peaches, blueberries or any other of your choice. I also used some leftover pie crumbs for my topping to add some extra crunch.

Meatless Menu for Lent #HolyWeek


I grew up in a Catholic{Christian} family where we celebrated "Holy week" or Semana Santa, during this week we usually didn't eat meat. It started on Ash Wednesday and continued until Good Friday. During this season, we didn't meat on Friday's and then the entire week on Holy week. There are several items that I grew up eating during this season and that I continue to make for my own home.

They are actually some of the staple foods in our home, beans and some type of fish or meat. Very healthy and fresh. This season we haven't been very observant, as we grow in our faith and in our relationship as a family we have learned to create moments of true faith and prayer throughout the year not just during a specific season. While we are not really "practicing" Catholics, we do remain faith-filled and pray often. 

And, truly these foods are just traditional homemade foods in both my Husband's and my home growing up; which both of our momma's have made for us since we were young. We always add new items in this case baked Zuchini tots and create our own twist to these meatless foods, which we love. They are healthy and help us stay away from processed foods on Friday night, which is usually pizza night for the kids or take-out night for us after a long week of work and parent duties. But, these dishes are quick and help us stay away from "bad" foods.  



Last Friday I was off from work and I was able to make three different items for dinner that night:

  • Lentil Soup (Recipe to follow)
  • Tuna (Recipe to follow)
  • And, Zucchini Tots which I found the recipe for on a video on Facebook see below:



:: Lentil Soup Recipe::

First, place 6 to 8 cups of water in a large pot, add a quarter of a small onion, a couple of garlic cloves, about a tablespoon of oil and 2-tablespoons of chicken bouillon (Knorr) and salt to taste to the water. I cover the pot and allow it to boil.

While that boils I cut my veggies; it's like making Pico de Gallo

I dice into small pieces; 
  • 1/2 of a medium white onion 
  • 2 small red tomato 
  • About 3 to 4 green serrano or jalapeno peppers (depending on the spice/heat you want)
  • And, a small bunch of cilantro finely chopped. 
I set them aside. 

Once the water begins to boil I add a small bag of lentil beans (usually Goya brand) to the boiling water. I let them boil on medium to high heat for about 20 to 25 minutes, the lentil starts cooking similar to beans. They will become soft and tender once ready, you can taste them before you add your veggies for salt and add more if needed at this time.

Once they have boiled and are soft enough I add all my fresh veggies and simmer for about 10 more minutes until the veggies mix and are cooked. Once ready make sure you remove the lid so that the lentils don't over cook. 

When we make them on any other day we add chopped bacon to them, similar to making charro beans. If you are adding bacon make sure to fry the bacon and drain excess oil, before you add it, don't add it raw. It will not cook correctly. 

Personally, when I serve them I squeeze fresh lime juice on them.  

It truly is a very simple after work soup to make for a quick and easy meal. 


::Tuna Recipe::

The tuna recipe is something my Hubby makes and I have learned to recreate for him, also very simple. 

I boil two to three large eggs until they are hard-boiled. While those boil. 

I take a 12-oz can of tuna (of your choice) drain it and place in a large mixing bowl.

I add;

  • Chopped celery (1-2 stalks of celery) 
  • 1/2 of a small white onion diced (in this case I took a handful from the onion I chopped for the soup and set it aside for the tuna)
  • 2-3 green jalapeno peppers, and  mix it all with the tuna. 
To make the tuna creamy, I add;

  • About 3 tablespoons of sour cream 
  • 2 tablespoons of light mayo 
  • About 1 tablespoon of yellow mustard, and mix it with tuna and veggies. 
Once the hard-boiled eggs are cooked, cooled and peeled, I separate the yoke and only chop and use the whites. I mix that into the tuna. 

Done. I serve that with crackers or bread. 

And, because we love spicy food I make sure we have picked jalapenos or serrano pepper on the table when we eat. 




Finally, I also made a fruit salad that morning. It was a lot of food and we even ate some the next afternoon.  Fruit salad was diced watermelon, cucumbers and jicama. Which I added lime juice and Tajin to.

::El Pollo Loco:: Houston Grand Opening

::Momma of Dos:: {This is a compensated post. We were invited to attend the Sugarland Grand Opening of El Pollo Loco. All statements are my own and honest opinion.}

When I think about family dinners, or gatherings; I think about great company, fun nights and of course delicious food! 



A couple of weeks ago we had the opportunity to attend the Grand Opening of the new El Pollo Loco, or as my Hubby calls it... el "Chi-ken Cra-zi". We traveled to what for us was the other side of the world to the beautiful City of Sugarland but it was worth it. 



We experienced wonderful company, good music and yes, delicious and fresh comida!! We also learned a little about how the restaurant is operated and how they manage to create such fresh food everyday. Let me tell you, it's some hard work but the awesome staff of El Pollo Loco in Sugarland led by Tara Beam do a great job and were so friendly. 



After experiencing the great food we hung out and enjoyed the fun night!

And, I am not sure if I was the only one that noticed but the staff has the best shirts with great sayings,  We're "Guaca-holics!" I want one!

::Turkey Tacos:: #miercolesdefoodie

One of my favorite dinners is taco night. For obvious reasons. It's perfect for busy nights, it's an easy, DIY, dinner. I simply create a filling and layout all the toppings. The combinations are endless. Our family loves this dinner and we make them often. 

Last night I made a spicy turkey taco filling. It was fast and easy to prepare. 



::I used the following::

  • Ground Turkey about 1lbs. 
  • Canned corn
  • 1 Medium tomatoe
  • 1/4 of a white Onion
  • 1 large Jalapeño 
::I did the following::

  1. I diced {or chopped into big chunks}all my veggies and drained the canned corn. 
  2. I seasoned my met with garlic salt and black pepper and a little of Mrs. Dash Lemon Pepper. {season to taste}
  3. I then added some Olive Oil to my frying pan and waiting for it to heat on medium. 
  4. I added my defrosted Turkey Meat, when it was half cooked I added all my veggies and corn.  I added a bit more seasoning while it was browning. I let it cook on high for about 10 minutes and then cook on medium for about 15 minutes. 

Once my turkey meat is fully cooked and browned and my veggies are tender, it's done!


::Usually our toppings are::
  • Sour Cream
  • Shredded Cheddar Cheese
  • Salsa {homemade or canned}
  • Lettuce
And, really anything that you want! 

::Last night my toppings were::
  • Avocado
  • Sour Cream 
  • & Shredded Cheddar Cheese

Taco Night success!

{Pozole} Happy "Cinco de Mayo" Ya'll!

Oh the old Cinco de Mayo Controversy. You see it's not "really" a Mexican "holiday" per say it's more of a State holiday for Puebla because May 5th was when la Batalla de Puebla took place. In all reality it should be called El Dia de la Batalla de Puebla but I think that for all marketing purposes here in the U.S. it's called Cinco de Mayo and it originated in California. 

Now that, that is out of the way. 

My all time favorite Mexican dish is Pozole. Not just Pozole but Pozole estilo Morelense. My Momma grew up in a small town called Temixco. It's in the state of Morelos. Most of my life I grew up in Mexico. And, if I have not stated it before, let me state it now. In order to understand me like most other people you must understand my background. Where I came from. Where my parents come from and where I grew up. 

My Momma is from Morelos, my Dad is from Reynosa. Oh, so VERY different. Not just in culture and in "language" but in food as well. Therefore, I grew up speaking differently depending on what area of Mexico we traveled to that Summer and eating differently. Now that I think back on it and although I hated it as a child, I am thankful for my parents and their distinct and unique backgrounds. Mexico is so diverse in itself. It's so sad that these days politics and drug lords have taken over more than is necessary really but we won't get into that. 

The recipe Connie! 

Oh yes, so this recipe originated from my Momma's kitchen, I have always loved it, it's always on my request list when my Momma is cooking and my kids now love it so I am glad that I learned how to make it.  

Pozole estilo Morelense: 

Ingredients ~ Ojas de Laurel {Bay Leaves}, Oregano, Onion, Garlic, Knorr de Pollo, Pork Shoulder/Butt or Pork Picnic works best, a large can of Hominy {forgot the ounces!}, Lettuce, Radishes, Avocado, Chiles de Arbol, Cayenne Pepper, and Limes.

Start off with a Medium to Large pot {You can cut all this in half to make a smaller pot}

About a gallon, or so of water {enough to cover your piece of pork meat so that it can cook}
For this recipe I also added chicken just cause that's how we make it sometimes.

In the pot I place my piece of meat with the gallon of water and about 4 to 5 Bay Leaves {Ojas de Laurel}, 2 table spoons of Oregano, half of an onion, because I am a huge garlic lover I use a whole bulb of garlic  
{you can use half}, and because it's easy to use as salt I use about 3 to 4 tablespoons of Knorr de Pollo  {you can taste it and add salt to taste or more Knorr de Pollo}. 

{Here in Houston you can find all of these ingredients in stores like Fiesta or Mexican Meat Markets, I found it all at Kroger or Wal-Mart too.} 

I place the pot on the stove at high heat until it boils, once it boils I remove the excess "foam" that travels to the top of the pot, I think it's fat, not sure. I then put it on low heat until my meat it cooked. I check it periodically for tenderness. Once the meat is soft and easy to pull apart {Usually about an hour or two} I then add the Hominy {you can rinse it and add a little extra water, about 3 cups} and let it cook for about 15 to 20 minutes until the Hominy is soft at touch. 

{Once the soup is done and meat is tender we like to pull the meat out of the pot because it gets mushy if you leave it in too long and it makes it easier to serve. I pull it apart in a large bowl with a fork and then every time I serve a bowl I add some meat to the top.} 

Now, preparation of your Pozole bowl... {the following ingredients are chopped while your Pozole is cooking} 

We add the following to the top of our Pozole:

Shredded lettuce
Chopped Onions
Chopped Radishes
Avocado slices {not in picture}
Lime Juice
Cayenne Pepper 
And, I like to blend {or you can stick them in your food processor} some dry Chiles de Arbol and add then to the Pozole as well. { You can also use the Pepper flakes that they sell already made at the store, we just like to make our own}

As a side dish we like to make either taquitos de papa y de chorizo like flautas and then we top them with sour cream, queso fresco and homemade salsa. This time I made tostadas, YES with canned re-fried beans topped with sour cream, queso fresco and home made salsa {a whole other post on it's own!}.

Then we eat it for days! Ha. It's just so good and comforting. It really does make me feel special and all warm and fuzzy inside!

{Monday Afternoon Food Post} Disclaimer Included

Disclaimer: { I am not a professional cook or a chef. And, I have no intention of becoming one. I have simply learned to "cook" because I am a Wife & Momma and Thankfully my family eats it all! Ha.}


A brave friend asked me for food advice, suggestions and reciepes... so this came about. I now think about everything I cook and take lots of pictures. But, this is totally not what I do..so forgive me if I miss something.

Here we go. Ha. {BTW, My Hubby is in no way to find out that I give cooking advice..he is an awesome cook...HA.}

When I became a Momma I didn't think that EVERYTHING would become so complicated and thought filled...but it did. A lot more than I thought it would be. I thought, my kids will ONLY eat organic, home cooked meals! Ha. {Then I went back to my full-time outside the home job and that went...well south really quick! ::no pun intended::}

My meals are quick and easy. Sometimes last minute meals, that are sometimes not super healthy but I try kind of things. And, most my recipes are either from my Momma, my Hubby, my Mother-in-Law or the internet with a little twist of me and the ingredients that I have available.

How to make Picadillo:

Ingredients: 1 lbs of ground beef
                   1/4 of a large onion
                    1 to 2 small cloves of garlic
                    1/2 a bag of baby carrots
                    1 small red tomato
                    2 small calabcitas
                    2 to 3 small red potatoes
                    1/4 cup of water
                    3 to 4 bay leaves
My 3 favorite food seasonings: 
                    Garlic Salt
                    Black Pepper
                    Knorr- de Caldo de pollo
Substitution:
{I sometimes add a bag of frozen veggies if I don't have fresh ones...any is good. I  do the one with corn, green beans and peas. }
                 
First, I dice and chop all of my veggies including the onion; I usually leave the baby carrots and garlic whole.

I set them aside and cook  my meat before adding the veggies. {I don't pre-cook or boil any of the veggies they cook well with the meat after I put them in the pot.}
I then season my meat with about a table spoon of garlic salt {or to taste}, 1/2 a table spoon of black pepper {or to taste}and add it to a pan with about 3 to 4 table spoons of oil { I try to use Olive Oil but regular oil does the trick just fine}.

I add to it the chopped onion and whole cloves of garlic and cook it on medium heat until all the meat is nice and brown....once the meat is completely cooked. I  add all the veggies. {diced tomatoes, calabaza, potatoes and the baby carrots.}

Then I add 1/4 cup of water, the bay leaves and 1 table spoon of Knorr de Caldo de pollo for added flavor and seasoning.

I usually let it boil on high heat for about 10 minutes and then lower the heat, cover it and let it simmer on low for about 25 minutes or until all my veggies are tender.

And, here is how much of a first timer I am...I didn't take a picture of my finished product. 

Thankfully, I do this dish often, it's quick and easy. I usually make some rice or frijoes de olla to go along with it. Or refried canned beans ::insert gasp here:: I know the horrors...but there are actually some good canned refried beans that we eat... will talk about those later.

{A Taco Post} :)

The other day I read a post about Tacos ::taco post HERE::!

Then.

I wanted tacos!

A couple of nights later....friends came over and asked if we wanted to go eat some "street tacos"...from a near by taco truck... al carrito de los tacos...nos fuimos! Ha. My Hubby who is totally about me writing about super cool and "cultural" things says to me... you should totally Blog about this... Ha.  I had already thought about it, I tell him! Ha.

So, in our area we go to "Clay Road tacos" the real name is Tacos Arcoiris... they are somewhat near my home but if you ride down HWY 6 in any direction here in Houston....you can probably find more than a hand of full of these yumma tacos de carrito.....previously I would ONLY. ONLY. eat them from a taco truck in North side Houston...where I grew up... but the truck moved and even though others claim to be just as good..they really aren't. Mis favoritos son de cabeza, pastor o de suadero!

We love going but with the kids we usually opt for bring them back home since they are right off the side of a super busy street... check out my son's face in this picture..he said to me.. "Mom, there are cars coming..." HA. He meant off the side of the road...onto the sidewalk into the car wash where this taco truck sits... the waitress is a really straight forward lady who writes it all down and walks off with your order a couple of feet away into the taco truck which now after a couple of years has two cooks.  It's a small truck the works space is tiny and the demand is high. The cooks work their butts off but and the new truck in their parking spot is good proof of their hard earned money night after night.

The taco truck gets really busy, you grab your own drink and now they have extra snacks like Cheetos and Mexican candy..which my kids LOVE. Like I stated in a post before..my kids can't go to Mexico but this is totally an experience that I want them to embrace and love..they ate their taquitos de barbacoa and Cheetos..the best of both worlds and Momma and the Hubby were oh so very happy to number one; have a dinner OUT, literally..with friends and number two we ate such delicious food that totally hit the spot that night!

Did I mention the tacos are only $1.00! Great eat and good deal, for Houston that is!

{Leftovers} ♥

I know I had sworn off all things Thanksgiving Turkey BUT I just HAD to do one more gobble-gobble post....

This one comes in the form of leftovers... that's right... leftovers. After a couple of days as you may recall we were all turkied-out! Ha. The traditional turkey that is. How is it possible that after 12 months of anticipation for the day to come and now, I am so ok with it being another 12 months away. Ha.

So, in our futile attempt to waste as little God-given food as possible my Hubby decided to make some TURKEY TACOS!

Yup! They were good. I also discovered that though I am not a good cook, I do make good salsa's ... here is our turkey taco lunch, the Saturday after Thanksgiving!





Recipe:

Take your leftover cooked turkey meat and mix it with diced onions, black pepper and a little bit of salt. This will be your taco stuffing.

Take your corn tortillas and heat them up on your comal. Place about 2 tablespoons of turkey filling in your tortilla and fold it over, like a taco, not a flauta!!

In a pan add some oil, when the oil is hot you lay the folded taco in the oil until it is crispy on one side, then carefully turn it over on the other, until that side is crispy.

Then place fried tacos on a napkin to soak off any excess oil.

Top your tacos with lettuce, tomatoes, cheese, sour cream and of course...SALSA!

And enjoy...some yumma tacos!

{A Menu and some Changes....}

I wanted to share what we actually ate for Thanksgiving..I don't have pictures, SORRY! 


Thanksgiving Menu:

Turkey {Marinaded with Tony Chachere's Injectable Roasted Garlic and Herbs; My Hubby made a rub for the outside from the Tony Chachere's Creole Seasoning} We cooked it for over 5 hours... it was yumma! If I do say so myself!

Ham {from Sam's Club, fully cooked and honey glazed baked with fresh pineapple slices}

Stuffing {my Momma's recipe... bagged seasoned stuffing mix, ground beef, rice, chopped up onions, bell peppers and celery; seasoned with salt and pepper to taste, fried then baked together added broth from boiling the turkey gizzards.} My Mother-in-Law made some as well but I don't know her recipe... :)

Seasoned fresh Green beans { I boiled the green beans then fried them with coarse black pepper and bacon! Bacon makes everything better...}

Corn on the Cob {Boiled with butter and garlic salt}

Mashed Sweet Potatoes {I boiled them then pureed them in the food processor my hubby added nutmeg and cinnamon.}


Lumpy Mashed Potatoes { Made by my Sis; boiled potatoes, heavy whipping cream, salt and pepper to taste}


Fruit Salad {Ric's cousin Erica made it! Very Yumma! }

Green bean casserole {Ric's Aunt MaryAnn made it...also Yumma!}

Pumpkin & Pecan pies and an Apple Cinnamon Bunt Cake { My Momma bought some and Ric's Aunt Yolanda made one from scratch, my Sis-in-Law Ale made the cake..... Yummmmaa!}

So, after TWO whole days of this.... I have decided to make lots of changes in the next 30-days... yep! I am going to do a detox and possible "look" change...I am scared and not sure how it will go..but we shall see!


I will start December 1.

Mexican Baby's Diet {No, en serio...}

This weekend I got an idea for a post as I fed my Lil'Momma...

I wrote something about it HERE. But, not sure if I have ever expanded on it.

So, we know that I am Mexican. Mi familia es Mexicana. Mis hijos son..pues MEXICANOS! {HA.}

No fighting it...

Here is proof:


Therefore...it's true that you ARE what you EAT.

We are Mexican..so we eat Mexican..not people..the food! {Hehe...a little Mexican humor!}

Ever since my son started eating "solids"..more like "mushies"... he has been eating Mexican food or homemade food. {Pozole, Caldo de Res, Arroz con Frijoles negros, Bolillos, Tortillas con sal, Crema y queso fresco, Sopes, Elote en vaso, Barbacoa, Sopa de fideo con platano, Carne Asada, etc etc..yes most is not that good for you but homemade it's a little better than store bought.} We have made it a point not to make our children into fast food or processed food kids....in a PERFECT world that would have completely happened...don't get me wrong.... My kids do eat healthy homemade meals but EVERY once in a while..Momma is tired and Daddy gets home late, so those nights we allow not only ourselves but our kids as well to eat processed foods...more so than fast food.

We have planned meals most weeks and on days when things don't go as planned we make things like:

Frozen Pizza{Usually DiGiorno..it's pretty good} , Mac'n'Cheese {Classic favorite, sometimes I use the box and others, I make my own..just pasta shells and Velveeta cheese, super easy} and Instant soups {Spicy ones for us and non-spicy for the kids}....

One of the most used processed food in our home is BEANS. {Duh.} This brand is actually pretty good:


 
As for fresh fruits and veggies....

We eat them all!

Some of my son's favs are:

Watermelon, Bananas, Blueberries, Cherries, Apples, Peaches, Pears, Pineapples, Melon, Platano Macho and Grapes.

He will eat just about any Vegetable; Carrots, Chayote, Sweet Potato, Cucumbers, Lettuce, Broccoli, Cauliflower, you name he loves it. Raw or cooked! With Italian dress or without! He also loves Lemons and Limes!

When he was little I simply boiled or baked {baked it better!} and then mashed them up and gave them to him...NO SALT. NO EXTRA CONDIMENTS. Just the veggie or fruit.

I didn't take any pictures of the food. But, I love making them all for Santi and now for Cami!

Also, Santiago also loves CHEESE and Yogurt! LOTS! It's another thing we got him used to since he was a baby...but he loves Doritos and Kool-Aid the same....so who know what he will be like in the future; I do know that he will NOT eat chicken nuggets or hamburgers from any fast food restaurant and he will NOT eat any type of canned pasta! He definitely knows the difference and that was what we wanted to get at when we started him on "mushies".

He also loves fries but we limit them from fast food places and bake our own instead. He has only been inside of a  McDonald's once and once to Chuck-e-Cheese. We don't want to totally deprive him of the world but we want him to know that he has options and that home cooking for the most part is cheaper and better for you.

We also limit sodas, sweets and too much bread or tortillas. We cook most meals with Extra Virgin Olive Oil {Or as Rachel R. like to call it..the good'ole EVOO} and we try not to fry to much, our oven is used often and we cook as a family! {Clean up is all Momma's! HA.} 

On top of that both of my kids are super active...Santi could spends days at the park and never get tired!


And, we drink lots of water and don't go a single day without it...


And trust me, we do eat junk food but try REALLY hard not to! We try to be as healthy and active as our busy Momma and Daddy lives allow us to.....
