::Honey Bunches of Oats Sweet Treat:: No fuss Cheesecake Recipe #ad

Our usual afternoon school routine begins with food! As soon as I or my Husband arrive with the kids they rush to the refrigerator for a snack, any snack will do usually. Some days they really crave something sweet. Our usual go to is cereal. Seems pretty basic I know but the kids love it and it's quick and easy, and inexpensive. Today, thanks to my partnership with Honey Bunches of Oats, I am sharing with you a fun, quick and easy snack that you can prepare the night before for that next day after school munchies hour! 

One of my all time favorite desserts is cheesecake! Of course, who doesn't love it. But, I am not a baker or master chef, nor do I feel like I have time to whip it up from scratch but thanks to this no fuss cheesecake recipe I definitely feel very gourmet. For this recipe, my Husband, who is rather and far more resourceful in the kitchen than I, helped me. We pulled together and did some team work, as Team Gomez usually does, even the kids joined in right before bed time. Not without some chaos and tears but all was good at the end of the night and the next morning when our cheesecake was done! 

You will need to prep this sweet treat the night before. It's very simple and far less complicated than it may sound. 

What you need: 
2- 8 oz packages of cream cheese
1/2 cup of Sugar
1/2 tablespoon of vanilla extract
2 large eggs
Pie dish 9-inch
1 box of Honey Bunches of Oats (will only use about 2 cups)


If you have a food processor grind about 1 1/2 cups of Honey Bunches of Oats into semi-fine grains, you can leave it semi-crunchy for texture. You can also use a blender and just use the pulse setting. 

Once you grind the cereal place it in a medium to large bowl so that you can mix with butter. Add about 1/2 a stick of melted butter to it and mix it together, the mixture will be soft but not too soggy. Then, in a 9-inch pie pan press the mixture into the bottom, to create a crust for your cheesecake.  

Set this aside while you work on your filling. 


In another bowl mix, 2 packages of 8 oz cream cheese, 1/2 cup of sugar, 2- large eggs and 1/2 tablespoon of vanilla extract. {You can add sugar and vanilla depending on how sweet you like it.} You can use a high-speed mixer or in my case, I used my food processor to wipe the ingredients together. Once my filling was soft and semi-liquid, I added it to the pie crust already prepared and placed in the oven at 325 degrees for about 40-45 minutes. 

Once the center is firm and set you can take it out. 




Once cooked I set it out to cool for about 20-30 minutes, then placed it in the refrigerator for 4 hours (or overnight) to set. I then added some fruity toppings. I had strawberries available but you can add peaches, blueberries or any other of your choice. I also used some leftover pie crumbs for my topping to add some extra crunch.

San Antonio we meet again... #SummerRoadtrips







It's been a couple of years since we visited San Antonio with the kids. Since, we were rained out of our camping trip back at the end of May, we decided that weekend to head on over to San Antonio and relax in a fun and dry hotel room! On our last visit, in 2014, we missed out on the River Walk boat Tour because we arrived to late in the day, so that was one of our goals for this short visit. And, since the kids are older we thought the Alamo would be a good learning experience on Memorial Day. It was very much worth it. Santiago loved hearing about the history of the Alamo and how Mexico used to own Texas. I am horrible at History but seeing that Santi loves it, I will need to brush up on it. He retained some of the information and during the week after our visit as we traveled to the Rio Grande Valley he asked me questions about Mexico and who won what. That just shows how much his little 6 year old brain is absorbing. 


We also had a wonderful boat tour it was hot outside but very relaxing. I don't have many pictures from it because I SnapChapped most of it (@realmommaofdos). The San Antonio waterway history with Rio Tours was very informative, the guide was funny and entertaining! The kids took in all the site seeing that the ride has to offer and were pumped to explore the River Walk some more. We had a fun caricature drawn of them by a local artist and then had some ice cream and food before heading back home. I think like many other cities, it will take several trips before we have visited all the great sites in San Antonio, just recently someone recommended I visit the missions. I have never been. Maybe next Spring we can return to San Antonio... in the mean time, hasta pronto!

Summer Drinks with Tekeen #TexasMade

One of my favorite Latina/Tejana food bloggers is Vianney of Sweet Life, she is one of the sweetest, no pun intended, food bloggers known to Texas. She recently featured a drink on her IG page where she used Tekeen as her blend. So, when Tekeen reached out to me as well about creating drinks with their premium cocktail mixes I was thrilled! Vianney was a great inspiration as I created my drinks.

When I think of Summer I think of fruity, refreshing drinks and of course classic margaritas! Thanks to Tekeen, I was able to start sampling my Summer drinks early. I decided to make a minimal-alcoholic version and then your full on bring the tequila version. As mentioned in my last post  I have a passion for local and Texas shops. What better than genuinely delicious Texas Made drinks. It's the best way to recover from the upcoming Houston heat. 
I made my version of a berry filled "white wine sangria" with the Tekeen Grapefruit cocktail mix. Think of it as a fruit infused, aqua fresca with a sweet kick. It was super easy. 

I combined (about 1 1/2 cups) of fresh blueberries, raspberries and sliced strawberries with (1 whole lime) lime wedges and mint (to taste, I used about 2 sprigs) to about 2 cups of the grapefruit flavored cocktail in a small receptacle. It's best if you have a large jar with a lid or pitcher with a top that seals. So, that your flavors lock in. I left it in the fridge for about 8 hours to chill and infuse and then served over ice, it created a colorful and refreshing drink. The alcohol in Tekeen is only about 12%, so it's very light and perfect for a relaxing afternoon in your backyard.    



My second drink was a classic, with a spicy kick alternative, a Margarita! Perfect for your upcoming Cinco de Mayo celebrations or just your everyday backyard get-together. 

Also, very simple I mixed about 2-3 cups of the Cucumber Lime-flavored cocktail (but you can also use the Passion Fruit Lime flavor) with about 1/2 cup of tequila (really this is up to you), in a large pitcher and stirred it together. You can also shake it in a drink shaker or blend it with ice for a frostier taste. I preferred it with crushed ice so I crushed about 3 cups of ice in the blender, and then salted my rim and served the mix over ice. I garnished it with lime wedges and mint. It was so good, I cannot lie. As an alternate serving, I also salted my rim with a combination of tajin and regular salt. The combination was so yummy! 

I am a no fuss kind of Momma and these two drinks were simple, quick and easy to put together. These drinks serve about 3-4 people.

:: My Weight Loss Journey- Q&A:: #InspiredSeries

I love meeting new people and listening to their stories, or following it on social media. That has been the case with today's Guest Blogger her name is Susana and she is from Houston. I started following her through a family member on Instagram, soon we became friends on Facebook and her goals and story just motivate me more and more everyday! 

I did a short Q & A with her so that you too can learn from her weight loss journey and follow her! 



Tell me; what is it that you were after when it came to your weight loss/what were your original goals?

I wanted to be HEALTHY and not have any medical issues... My original goal was to lose 100 lbs and to be able to do a 5k run.... 

What motivated you to start on this journey? 

Honestly MY EX BREAKING UP WITH ME....  I felt like I was not gonna be good for no one at me weight witch was close to 400 lbs...  

What was your plan of action?    Eat healthy and workout..... 



How did you first get started and what was the most difficult part? 

Getting up and taking my self to the gym when I first started! I could only last up to 30 minutes at the gym before I wanted to call it quits.

Did anyone help push you or inspired you to get here? 

Yes..... My family and friends but my BIGGEST INSPIRATION was my personal trainer Josh Norris.... 

What has your progress been? I have lost over 150 lbs!

How are you keeping motivated to continue down this path? 

don't want to gain any of this weight back.... I am my biggest MOTIVATION!! 

What advice do you have for others in your place? 

It's not an easy road, don't give up, &  keep pushing YOURSELF! Always remember why you started. 



We all struggle daily with so many self issues; what has been your favorite quote, book, movie, item, or website that has helped you keep strong and move forward? 

Do not dwell in the past, do not dream of the future, concentrate the mind on the present moment.~Buddha


Did you run the 5k? If so, when and which one? 

Yes, I ran and walked it took me over 2 hrs to do my first one but I got it done and I did the color me Run. 

What is your favorite workout? 

LEG DAY........ you can't go wrong with working out that booty... I am really getting into cycling and swimming at the moment. 

What is your least favorite? 

I will have to say upper body chest and arms ohhh no I cant stand it at all... I would say I don't like CARDIO... haha!  

How do you feel about your progress? 

I feel great I have a lot more to go but I love how I feel and how I look..... I love my CALVES.....

::Traveling Texas with Toddlers:: South Texas that is.... {Part 1}

This Summer we had a semi-planned trip to South Texas. Our first big road trip of the year. I finally sat down to edit our pictures and write our re-cap! 

Day 1- Day 3
::Houston,TX  to McAllen, TX::
Friday-Saturday/Sunday

Honestly, we loved our trip it was a great South Texas experience and we know that we can make it better every year to come. The main reason we planned the trip the first weekend in June was to be a part of my nieces birthday. We celebrated with Emma and basically visited with family that we had not seen in a year for about 2 days or so.

I grew up very close to my cousins in Reynosa. We visited them months at time, 2 to 3 times a year when we didn't live in the Valley. I want my children to have that same closeness with my loved ones. The same sense of family and love. The same innocent childhood that we all deserve.

On Sunday my parents were leaving us, we had breakfast with them in McAllen finding a lot of good snack and food places! Camila even got to see a lot of Quinceañera dresses. Her favorites. Something that really makes me happy. A tradition that will not end with my generation. My parents left soon after our morning in McAllen, they came back home to Houston. So, we headed over to the South Texas Museum of History, we found it through a brochure at our hotel.

The museum was a wonderful exhibit from the moment you open the door! 

We transformed from Vaqueros to Conquistadores. We learned about our ancestors and how Mexico evolved from Tejas to Texas. The wars, the hardships, and everything in between. Mexico History, Texas History and so much more. Every corner of the museum held a new treasure of  interactive information. It kept the kids entertained and I honestly loved it. Every hallway elaborately and colorfully describing Texas History. Made us wish we lived in the Valley and could go to all of the events! They have so many great ones going on this Summer, make sure you check out their website. 

We loved the hands on, and narratives. Definitely a hidden treasure of the valley. I had no clue we had this museum so glad we found it. My kids truly embraced it all and took it one bit of brain developing information at a time. If you have children of any age, or not, and you are in South Texas, I highly you encourage you to visit this museum.

Part of learning where I grew up and where we come from, has a lot to do with my faith. Being Catholic is something that I feel I haven't taken lightly. I want to instill in my children our faith, our culture and what it all means. I know that by exposing them early on to all of this will help them not only form their own beliefs but shape their future decisions. Even if they don't decide to continue in the religion, I hope that they would at least make informed decisions about what they want to believe in. 

San Juan is a church I grew up going to. The Miracle room is my favorite. The altar is amazing. My life is forever deepened in what I want for my family. I pray. I do. God knows us well. 



Oh and it wouldn't be a vacation without a little tantrum action... yep. We have those moments. We are real. We are not perfect. They ran and cried outside the church. Nice. I know.
