{Pozole} Happy "Cinco de Mayo" Ya'll!

Oh the old Cinco de Mayo Controversy. You see it's not "really" a Mexican "holiday" per say it's more of a State holiday for Puebla because May 5th was when la Batalla de Puebla took place. In all reality it should be called El Dia de la Batalla de Puebla but I think that for all marketing purposes here in the U.S. it's called Cinco de Mayo and it originated in California. 

Now that, that is out of the way. 

My all time favorite Mexican dish is Pozole. Not just Pozole but Pozole estilo Morelense. My Momma grew up in a small town called Temixco. It's in the state of Morelos. Most of my life I grew up in Mexico. And, if I have not stated it before, let me state it now. In order to understand me like most other people you must understand my background. Where I came from. Where my parents come from and where I grew up. 

My Momma is from Morelos, my Dad is from Reynosa. Oh, so VERY different. Not just in culture and in "language" but in food as well. Therefore, I grew up speaking differently depending on what area of Mexico we traveled to that Summer and eating differently. Now that I think back on it and although I hated it as a child, I am thankful for my parents and their distinct and unique backgrounds. Mexico is so diverse in itself. It's so sad that these days politics and drug lords have taken over more than is necessary really but we won't get into that.

Oh yes, so this recipe originated from my Momma's kitchen, I have always loved it, it's always on my request list when my Momma is cooking and my kids now love it so I am glad that I learned how to make it.  

Pozole estilo Morelense: 

Ingredients ~ Ojas de Laurel {Bay Leaves}, Oregano, Onion, Garlic, Knorr de Pollo, Pork Shoulder/Butt or Pork Picnic works best, a large can of Hominy {forgot the ounces!}, Lettuce, Radishes, Avocado, Chiles de Arbol, Cayenne Pepper, and Limes.

Start off with a Medium to Large pot {You can cut all this in half to make a smaller pot}

About a gallon, or so of water {enough to cover your piece of pork meat so that it can cook}
For this recipe I also added chicken just cause that's how we make it sometimes.

In the pot I place my piece of meat with the gallon of water and about 4 to 5 Bay Leaves {Ojas de Laurel}, 2 table spoons of Oregano, half of an onion, because I am a huge garlic lover I use a whole bulb of garlic  
{you can use half}, and because it's easy to use as salt I use about 3 to 4 tablespoons of Knorr de Pollo  {you can taste it and add salt to taste or more Knorr de Pollo}. 

{Here in Houston you can find all of these ingredients in stores like Fiesta or Mexican Meat Markets, I found it all at Kroger or Wal-Mart too.} 

I place the pot on the stove at high heat until it boils, once it boils I remove the excess "foam" that travels to the top of the pot, I think it's fat, not sure. I then put it on low heat until my meat it cooked. I check it periodically for tenderness. Once the meat is soft and easy to pull apart {Usually about an hour or two} I then add the Hominy {you can rinse it and add a little extra water, about 3 cups} and let it cook for about 15 to 20 minutes until the Hominy is soft at touch. 

{Once the soup is done and meat is tender we like to pull the meat out of the pot because it gets mushy if you leave it in too long and it makes it easier to serve. I pull it apart in a large bowl with a fork and then every time I serve a bowl I add some meat to the top.} 

Now, preparation of your Pozole bowl... {the following ingredients are chopped while your Pozole is cooking} 

We add the following to the top of our Pozole:

Shredded lettuce
Chopped Onions
Chopped Radishes
Avocado slices {not in picture}
Lime Juice
Cayenne Pepper 
And, I like to blend {or you can stick them in your food processor} some dry Chiles de Arbol and add then to the Pozole as well. { You can also use the Pepper flakes that they sell already made at the store, we just like to make our own}

As a side dish we like to make either taquitos de papa y de chorizo like flautas and then we top them with sour cream, queso fresco and homemade salsa. This time I made tostadas, YES with canned re-fried beans topped with sour cream, queso fresco and home made salsa {a whole other post on it's own!}.

Then we eat it for days! Ha. It's just so good and comforting. It really does make me feel special and all warm and fuzzy inside! 

{Trust me it's not that difficult, and it's so good!}

Do you ever wonder...

Why people are in your life?

Everyday people cross paths with everyday stories.

Some of sorrow others of joy.

We are all on this journey together. {Technically} To help and encourage, to love and to hold....

Life has brought many great people into path. These days I think about how Blessed I am to have these people in my life.

I learn from their mistakes. I heal with their wounds. I pray for them.

We pray for each other.... We love our families..... We go to Church.....

We craft. We Blog. We take pictures....and have fun!

I've seen them grow. I've seen them hurt. I love them just the same.

We cry together. We laugh at one another. We live life.....

That's life.

A journey.

We don't take it too serious and always tell the truth...even if it hurts...

We are all on the same bus with different stops. {The big yellow bus that is... }

No matter where this ride may take me.....I am holding on tight and enjoying it...every minute of it...

Life is too short to be worried about tomorrow...and what or who it may or may not bring...


Only God knows when it will stop..and when I will get off the bus.... {I hope it's at Disney World....Wha'? I hear it's fun...I'm just sayin'....}

{Blessed @ 30}

It was 30 years ago today that God allowed me to live.



I was born at about 28 weeks gestation, a 2lbs 15 oz preemie in Brenham, Texas. It was then that God gave me{and my Mom} a second chance.

I Thank God because He has allowed me to.... be here on this earth; to grow and gain spiritually, to graduate college in 2005 at the age of 24, to Marry my long time sweet-heart in 2006 at the age of 25, to have my most amazing Blessings, my children, Santi in 2009 {at 28}& Cami in 2011{at almost 30}. To have beautiful friends in my life. To share my life with my Husband, my Santi and my Cami and with my Mom and Dad, Brothers {Max and Belon} and Sister {Moe..I mean Jess} and my beautiful nephew Olin. To give me a GREAT extended family!

I Thank God for all the good and bad in my life, I have learned and grown from it all. No matter how bad, I've moved on. And, with the amazing moments... I've moved up!





I Thank Him and Praise Him...for it ALL.


Thank You to everyone in my life; now, in the past and in the future!

When a "funny feeling" turns into a 9 month journey...

[ This Blog Post is from 2009, when I was still pregnant with my son, but still very accurate]

34 weeks ago I started a journey.

A new journey in my life. A journey unlike any other in my entire 28 years, and that would definitely change my life. I wouldn't have had it any other way or change it for anything in the world.

It was surreal at first and slowly with every growing day the belly popped and the baby's heart and movements started to leave me in amazement. Amazement of what the Lord has created for us to experience.

Life.

Life is so amazing, being formed within for 40 weeks. Despite all the ups and downs that have come from this journey, it's been a perfect one of bonding with this tiny child inside of my womb. His little pushes and tugs though at times painful have made my heart grow to a size so big that at the end of this journey I may have to cut a piece out and freeze it for a later date.

God is amazing and HIS timing is incredible. 10 years after having met Ricardo, not the typical person who I thought I would end up with, and 3 years after our marriage I would have never thought to have been blessed in such wonderful ways. Had you told me 34 weeks ago that this year would be the year that Ricardo and I accomplished this dream I probably wouldn't have believed it. Our lives have not been easy. But, this journey has allowed us to not only continue to grow in our love and our FAITH but to grow as individuals with more goals and accomplishments to attain. I personally feel like I have learned who and what is important. I have placed a special emphasize on peace and have learned to ignore those people and those situations that just have no positive meaning in my life.

I have grown to appreciate my mom and my husband much more. To know what it's like to bare life and to be a mother. Needing my mom at every moment and every breath, wondering if the pushing and pulling inside and all around my body is normal. Needing her when my feet look like balloons and my back feels like an elephant stepped on it. Needing my husband just to be there. To be the one who endures the tears, the yelling, the hysteria, the joys, the laughter and the love. I have attempted all my life to be very independent, very self-sufficient, to regress now goes against my will but is much needed. I am very fortunate to have these two people in my life, I am not sure how other women do it and being the big baby that I am, I am not sure that I would have survived on my own.  Though my books say that instinct kicks in and you should know what and how to do it, I am not sure to be that strong. Which is why I consider myself delightfully blessed to have my mom and my husband in my life.

The journey will soon come to an end, only to start a whole new phase in my life; Motherhood. As if being a daughter, sister, student, employee, friend and wife weren’t hard enough God has now given me one more duty.

He knows that I can handle it and that
I can embrace it.
I will rise to this challenge with grace and Love like every other.
I am Thankful for life.
I am Blessed.
