Meatless Menu for Lent #HolyWeek


I grew up in a Catholic{Christian} family where we celebrated "Holy week" or Semana Santa, during this week we usually didn't eat meat. It started on Ash Wednesday and continued until Good Friday. During this season, we didn't meat on Friday's and then the entire week on Holy week. There are several items that I grew up eating during this season and that I continue to make for my own home.

They are actually some of the staple foods in our home, beans and some type of fish or meat. Very healthy and fresh. This season we haven't been very observant, as we grow in our faith and in our relationship as a family we have learned to create moments of true faith and prayer throughout the year not just during a specific season. While we are not really "practicing" Catholics, we do remain faith-filled and pray often. 

And, truly these foods are just traditional homemade foods in both my Husband's and my home growing up; which both of our momma's have made for us since we were young. We always add new items in this case baked Zuchini tots and create our own twist to these meatless foods, which we love. They are healthy and help us stay away from processed foods on Friday night, which is usually pizza night for the kids or take-out night for us after a long week of work and parent duties. But, these dishes are quick and help us stay away from "bad" foods.  



Last Friday I was off from work and I was able to make three different items for dinner that night:

  • Lentil Soup (Recipe to follow)
  • Tuna (Recipe to follow)
  • And, Zucchini Tots which I found the recipe for on a video on Facebook see below:



:: Lentil Soup Recipe::

First, place 6 to 8 cups of water in a large pot, add a quarter of a small onion, a couple of garlic cloves, about a tablespoon of oil and 2-tablespoons of chicken bouillon (Knorr) and salt to taste to the water. I cover the pot and allow it to boil.

While that boils I cut my veggies; it's like making Pico de Gallo

I dice into small pieces; 
  • 1/2 of a medium white onion 
  • 2 small red tomato 
  • About 3 to 4 green serrano or jalapeno peppers (depending on the spice/heat you want)
  • And, a small bunch of cilantro finely chopped. 
I set them aside. 

Once the water begins to boil I add a small bag of lentil beans (usually Goya brand) to the boiling water. I let them boil on medium to high heat for about 20 to 25 minutes, the lentil starts cooking similar to beans. They will become soft and tender once ready, you can taste them before you add your veggies for salt and add more if needed at this time.

Once they have boiled and are soft enough I add all my fresh veggies and simmer for about 10 more minutes until the veggies mix and are cooked. Once ready make sure you remove the lid so that the lentils don't over cook. 

When we make them on any other day we add chopped bacon to them, similar to making charro beans. If you are adding bacon make sure to fry the bacon and drain excess oil, before you add it, don't add it raw. It will not cook correctly. 

Personally, when I serve them I squeeze fresh lime juice on them.  

It truly is a very simple after work soup to make for a quick and easy meal. 


::Tuna Recipe::

The tuna recipe is something my Hubby makes and I have learned to recreate for him, also very simple. 

I boil two to three large eggs until they are hard-boiled. While those boil. 

I take a 12-oz can of tuna (of your choice) drain it and place in a large mixing bowl.

I add;

  • Chopped celery (1-2 stalks of celery) 
  • 1/2 of a small white onion diced (in this case I took a handful from the onion I chopped for the soup and set it aside for the tuna)
  • 2-3 green jalapeno peppers, and  mix it all with the tuna. 
To make the tuna creamy, I add;

  • About 3 tablespoons of sour cream 
  • 2 tablespoons of light mayo 
  • About 1 tablespoon of yellow mustard, and mix it with tuna and veggies. 
Once the hard-boiled eggs are cooked, cooled and peeled, I separate the yoke and only chop and use the whites. I mix that into the tuna. 

Done. I serve that with crackers or bread. 

And, because we love spicy food I make sure we have picked jalapenos or serrano pepper on the table when we eat. 




Finally, I also made a fruit salad that morning. It was a lot of food and we even ate some the next afternoon.  Fruit salad was diced watermelon, cucumbers and jicama. Which I added lime juice and Tajin to.

{Dig Deeper} What the silence is teaching me....

I haven't always been a "person of faith" and still most days I fail at just about everything and in just about every area of my life... but one thing that I never give up on is seeking or as I have recently discovered... digging deeper. I seek faith and hope in everything because I know that those feelings come at the most unlikely times, from the most unexpected places and at times in the worse of situations.

With that said... the last few months I have been a Stay@HomeMomma and I think that some of the most difficult situations have come about....and for some reason... my ability to handle it all is slowly becoming less? Or maybe this is me becoming stronger? All I know is that for months I felt worn out and overly spent.

When I was in my 20's I fought many battles and looking back...I came out stronger than before...now in my 30's the battles are no longer visible but within. My life is good though. I don't worry about the outside world unless the outside world steps into my life... then it's on. Fighting the battles these days are taken on in a whole new way.... I am a firm believer of Prayer. Silent prayers. Or out-loud with tears... it's all I have most days...

If there is something that I have learned in the last few months as a Stay@HomeMomma is that I have/had little to no patience. You would think that as a Momma and wife I would have lots of it and maybe it's something that in the past I have taken for granted but my patience has I think grown. My "tolerance" of little everyday things has become heightened. I am more aware of the fact that I apparently am not as patient as I should be not just in general with life but as a Momma with two toddlers who love to run and never use their inside voice, as a Wife with a Hubby who works very hard outside the home, as a Friend who needs to be more supportive and encouraging, as a Job Seeker who needs to be reminded that the "dream job" is out there somewhere, as a Sister who needs to learn to just give when giving is impossible, as a Daughter who needs to love no matter what, and as a person of faith...who needs to DIG DEEPER. 

Lent is in full effect and as a person who loves to learn and grow... I have learned that you can never learn enough, and you can always GROW more. My life is NOT perfect, it's far from it. My life is not simple, it's chaos. My heart though is yearning... to dig deeper. 

The silence is great but the lessons are being stored. In a heart, a soul and a brain that will one day, soon, burst... of light and sunshine onto not just her little home deep within but for the world to see. Just because I am silent doesn't mean I am not learning, growing and yes....digging deeper....

{Accountability} ♥

On Monday I wrote about my Momma/Wifey feelings which would then translates into Woman feelings.
My Woman/Momma/Wifey heart has been weighing a little heavy on my chest these days. It's so easy to get caught up in helping and doing for everyone else that you quickly forget that if Momma don't feel good then no one will feel good. How you feel and how you show those emotions rubs off on your spouse and your children. That's a whole lot of icky in one household. Trust me. I know.

I don't like feeling blah. You know those days when the pity parties just don't stop and you are the guest of honor and the ONLY guest...the self-drama is all up in your face. In Spanish we say.. "haces una tormenta en un vaso de agua.." {I drown myself in shallow waters...}

Those days when what I look like, who I am, where I have come from, what I have "achieved" or not achieved, and where I think I am going just doesn't add up or seem at all right.

Then, I realized... "I am having a mid-life crisis". It didn't hit me right at 30 but I've had a few months to wallow..in my 30's... and uhm, oh.M.gee. I AM SO 30! I definitely feel it today. Not like today, today but these days... HA!

I discovered in these little self-pity parties that I am my own Debbie Downer. Ouch. I don't want to be that person for myself! I should love myself. I should appreciate myself. I should be happy with myself. Yet. I wasn't. {I am not.} Then I thought. How? How did I get to this place of self-yucky? I slowly allowed myself to be defined by situations and circumstances. I had that downward spiral into being the person I know I am not.

Well, there is no sense what.so.ever in remaining in THAT place. {It's not healthy, for one.} NO WAY. That's just not me. It's never been me. I move. I create. I am who I am and I move forward!

I will. I have. I can. Those are the words filling my heart today. Over and over. I will. I have. I can. Most of my current blah I know has come from my physical appearance. I looked in the mirror the other day and thought...this is me? Surely it can't be? But, yep it was! Wow. I am so 30! Ha.

 Change. How?

ONE. DAY. AT. A. TIME.

One small new change is accountability. I have a couple of again, ah-MA-zing, women who are trying every day to help me achieve these SELF-LOVING goals, in return, I will more than willingly help them achieve SELF-LOVE. I did say this was a year of change.

So, let the SELF-LOVING begin!

{Perfect day to start....it's Ash Wednesday! Let the next 40 days begin....}

Why are we so hard on ourselves?

We try and try and try...

We do our best and think that we are doing our best...

Yet when evaluation of the self comes...we fail... to ourselves...

I have gone through 5 days of Lent season now....

catching myself...
torturing myself...
failing...myself....
defining myself...
evaluating myself....
devaluing myself...
reminding myself....
praying...for myself...

And still.. I can't seem to win this battle...against....MYSELF.

God has given me so many tools and resources, so many wonderful women of support...and still I fail... BUT then I think...I AM HUMAN...we are suppose to fail...Jesus was tempted by the devil...He never failed..but we are NOT Jesus.

Then I think, I am being  SO  hard on myself. I need to stop. I need to realize that I can do this...but ONLY with prayer and grace. With willingness and an open heart..I will be victorious. I will move forward and I will have FAITH.

That through HIM all things are possible.

Seek, Resolve, and Share.

These are my 3 Lent season purposes {SEEK, RESOLVE, AND SHARE}.

As I go through this journey, I can't promise flowers and butterflies but I will say this..I am honest, open and willing.

I accept that for a while now Pride and Stubbornness have been my sidekicks. How petty? Yes. It is.

I am praying though for my hard heart to soften and open up to what the world has to say about me.

I am willing to change...a willingness that only I can bring forth....an effort that God will give me grace to endure..no matter what that change is!

I am not going to lie. I have been down this road before and failed...I have failed Him. HE HAS NEVER FAILED ME.

Again, I am honest. I want to change. I will be 30 years old this year. How ridiculous is that at 30 I can hold on to such a difficult past and think that I can move forward; whole heartily? I can't. I need to truly let go.

God is with me.

Why am I scared?

Who should I fear?

If He is with me...every step of the way...how could I think that He would let me go?

That His tight hold would loosen? Never.

He has never failed me...even though I have failed Him..many times

Today I realize how Blessed I am and how much I don't deserve it

I don't.

But, still HE manages to show me how MANY more Blessing He can give me!  

And HE and THEY are all AMAZING!

Thank You God for giving me everything this undeserving girl could wish for and then some...

I PRAISE HIM FOR....

My Faith.
My Husband.
My Son.
My Daughter.
My Mom and Dad.
My Siblings.
My Nephew.
My extended family on both my hubby's side and mine.
My Sisters-in-Christ and amazing Girlfriends.
My Home.
My Job.
My Education.
My life as a whole.

Seemingly Perfect.

It's a lie to think that we are perfect.

We are not.

At all.

I have never been one to even remotely express or act perfectly.

I am human. I make many mistakes. I've said it a millions times...my husband is not always polite, my son doesn't always match and me..I am not ever perfect!

The fact that my husband and I have decided to be and do things in certain order and with specific purpose...doesn't make us perfect. We have been through a lot the last 12 years, together and as individuals. Never loosing sight of either fact. While we were still living at home we realized that there were individual "monsters" to tame, with our respective families. We "resolved" and agreed to leave behind those issues and "monsters", behind us not only the day we moved in together, but also 8 months later when we met at the altar. It's written, and I say it to young couples all the time. Ricardo taught me after we moved in together and got married that we could no longer be slaves to those "monsters" and problems within our former families, because now we had a family of our own to nurture and care for.

Married or not, life as a live in couple doesn't work until you resolve that, that life is only about 2 people who rely on God, you and your significant other.

At first this didn't resonate or make sense with me, the way it may not make sense to you.

My mom was a "single" mom for many years; I, being the oldest took on many, many, many roles; assistant provider for my 3 younger siblings, emotional supporter to my mom, over-all make things better for my family person, acting as a friend to my mom, mom to my younger siblings, sister to my siblings,student, employee and then some. Life was not easy. I endured a lot with my mom, good and bad. It was her and I through think and thin. But, she understood the day that I moved out and more so the day that I got married that I had to be everything I was to her but for my husband now. That her problems and issues had to be handled to the best of her ability. She was not selfish and never attempted to hold me back from becoming a completely, devoted wife and now mother. She understands my role and I appreciate that respect and the space that she has given me to develop my marriage in His eyes and for His will and purpose...so that now, as a grown woman..who seeks Faith and Wisdom, I can once more be her friend while she is my mom.

I am and have always been there for my mom as she has been there for me..but just as she once left her family to seek a family of her own..I left mine. It has made me stronger and wiser and allows me new perspective to handle new situations.

Respect. Space. God. Two People. Faith. Open Heart. Obedience. Honesty. Love. It's what it takes to begin a Faith-filled, loving, devoted and committed Marriage of Two.  {I THINK}

This is all random talking. I am on a journey this Lent season to resolve, seek and share.

Plain and Simple.


God, heavenly Father,
look upon me and hear my
prayer
during this holy Season of Lent.
By the
good works You inspire,
help me to discipline my body
and to be renewed in spirit.

Without You I can do nothing.
By Your
Spirit help me to know what is right
and to be eager in doing Your will.
Teach me to find new
life through penance.
Keep me from sin, and help me live
by Your commandment of love.
God of love, bring me back to You.
Send Your
Spirit to make me strong
in
faith and active in good works.
May my
acts of penance bring me Your forgiveness,
open my heart to Your love,
and prepare me for the coming feast
of the Resurrection of Jesus.

Lord, during this Lenten Season,
nourish me with Your Word of
life
and make me one
with You in love and prayer.

Fill my heart with Your love
and keep me faithful to the Gospel of Christ.
Give me the
grace to rise above my human weakness.
Give me new
life by Your Sacraments, especially the Mass.

Father, our source of life,
I reach out with joy to grasp Your hand;
let me walk more readily in Your ways.
Guide me in Your gentle mercy,
for left to myself I cannot do Your Will.

Father of love, source of all blessings,
help me to pass from my old
life of sin
to the new
life of grace.
Prepare me for the
glory of Your Kingdom.
I ask this through our
Lord Jesus Christ, Your Son,
Who lives and reigns with You
and the Holy Spirit, one God, forever.

Amen.
